There’s something about autumn in rural NSW that just feels… right.

The mornings are a little crisper, the paddocks start to soften in colour, and suddenly you’re reaching for a jumper before your first cuppa. It’s that beautiful in-between season, not quite winter, but definitely time to slow down just a little.

And if there’s one thing we love around here, it’s a recipe that matches the mood.

Something warm. Something comforting. Something you can pop in the oven while you potter around the house (or sneak in a quick outfit change šŸ˜‰).

So today, we’re sharing a simple, no-fuss favourite…

šŸ Easy Apple Crumble

The kind of dessert that fills the kitchen with the most beautiful smell and makes everyone wander in asking, ā€œWhat’s cooking?ā€

Ingredients

For the apples:

  • 6–8 apples (whatever you have on hand — Granny Smith, Pink Lady, even a mix!)
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ½ teaspoon nutmeg (optional)
  • Splash of water

For the crumble topping:

  • 1 cup rolled oats
  • 1 cup plain flour
  • ¾ cup brown sugar
  • 125g butter (melted)
  • Pinch of salt

Method

  1. Preheat your oven to 180°C (fan-forced).
  2. Prepare the apples
    Peel, core and slice your apples. Pop them into a saucepan with the sugar, cinnamon, vanilla, nutmeg and a splash of water.
    Cook gently for about 5–10 minutes until just softened.
  3. Make the crumble
    In a bowl, mix together oats, flour, brown sugar and salt. Pour in the melted butter and stir until it forms a crumbly texture.
  4. Assemble
    Spoon the warm apple mixture into a baking dish and sprinkle the crumble evenly over the top.
  5. Bake
    Pop into the oven for 30–35 minutes or until golden and bubbling.

Serve warm with:

  • A scoop of vanilla ice cream
  • A drizzle of cream
  • Or custard (a personal favourite on those cooler evenings!)
