If you’re after the ultimate gooey, chocolatey pick-me-up, these Gooey Chocolate Chip Cookies from Taste.com.au are where it’s at. We make these regularly in our home.

Crispy on the edges, soft and chewy in the middle, and packed with melty chocolate chunks – they’re dangerously good.

They come together easily with pantry staples (yes, you probably already have everything), and the brown sugar gives them that deep, caramel-ly flavour we all love.

Perfect with a cuppa or warm straight from the oven – if they even make it to the cooling rack!

INGREDIENTS 

  • 185g butter, softened
  • 1 cup (200g) brown sugar
  • 1/2 cup (100g) caster sugar 
  • 1 egg
  • 1 egg yolk
  • 2 cups (300g) plain flour 
  • 1/2 tsp baking powder
  • 1 cup (200g) choc chips or coarsely chopped block chocolate
  • 1 tsp vanilla bean paste 
  • 1/2 cup walnuts or hazelnuts for a nutty twist. (optional)

METHOD

  • Step 1 

Preheat oven to 180C. Line 2 oven trays with baking paper.

  • Step 2

Use an electric mixer to beat the butter, vanilla bean paste, and combined sugars in a medium bowl until pale and creamy. Add the egg and egg yolk and beat until well combined. Add the flour and baking powder and stir with a wooden spoon until combined. Add the chocolate (and nuts if applicable) and stir to combine.

  • Step 3

Roll 2 tablespoons of mixture into a ball. Place on the lined tray and gently flatten. Repeat with remaining dough. Bake in preheated oven for 12 minutes (or a further 5 minutes for a crisper biscuit). Remove from oven and set aside on the tray to cool completely.
