No-Cook Peach, Tomato & Burrata Summer Salad

January in rural NSW calls for food that’s fresh, light and easy. It’s too hot to stand over the stove, peaches are at their peak, tomatoes actually taste like tomatoes, and meals are often eaten late, after the sun has dipped and the heat eases.

This is the kind of dish you make when you’ve been out all day, don’t want to cook, and still want something a little bit special.

What You’ll Need

(serves 2–4)

  • 2 ripe yellow peaches, sliced

  • 2–3 large ripe tomatoes, sliced (heirloom if you can get them)

  • 1 ball of burrata (or fresh mozzarella if that’s what’s in town)

  • A handful of fresh basil leaves

  • Extra virgin olive oil

  • Balsamic glaze (optional but lovely)

  • Sea salt and cracked pepper

How to Make It

  1. Arrange the peach and tomato slices on a large platter or shallow bowl.

  2. Tear the burrata gently and nestle it over the fruit.

  3. Scatter basil leaves over the top.

  4. Drizzle generously with olive oil and a little balsamic glaze if using.

  5. Finish with sea salt and cracked pepper.

That’s it. No oven. No stove. No stress.
