October 1st marks International Coffee Day, and while we never really need an excuse to sip a cuppa, it’s the perfect reminder to celebrate the ritual of coffee. For many of us, it’s more than just a drink, it’s a pause in the day, a moment of connection, and sometimes even the start of new ideas.

To celebrate, we’re sharing a simple, no-fuss recipe that combines coffee and cake into one delicious bite: Coffee & Walnut Loaf. It’s moist, full of flavour, and just right for sharing with a friend (or keeping all to yourself).

Recipe – Coffee & Walnut Loaf
Ingredients:

  • 1 cup strong brewed coffee (cooled)

  • 125g butter, softened

  • 1 cup brown sugar

  • 2 eggs

  • 2 cups self-raising flour

  • ½ tsp cinnamon

  • ½ cup chopped walnuts

Method:

  1. Preheat oven to 170°C and line a loaf tin.

  2. Cream butter and sugar until fluffy. Beat in eggs one at a time.

  3. Add flour and cinnamon, alternating with coffee, mixing gently.

  4. Stir in walnuts.

  5. Pour into loaf tin and bake 40–45 mins or until a skewer comes out clean.

  6. Serve warm with butter.....and don’t forget the coffee!

This loaf is simple, hearty, and perfect for morning tea. It also reminds us that rituals—like brewing coffee or baking something special can ground us, slow us down, and bring joy into the everyday.
