Gooey Chocolate Brownies

Sometimes we just need a devilishly rich slab of deliciousness to get us through the afternoon.. or morning.... or evening... or anytime really.

We have a simple recipe that should only take about 45 Minutes in a 22cm Square Baking tray. As always keep a watch on the oven - we want them crisp on the outside soft in the center


4 Eggs

100g Plain Flour

100g Butter - Chopped

200g Dark Chocolate - Chopped

250g Golden Caster Sugar 

30g Cocoa

1 tsp Baking Powder

Optional - We like to add an extra 100g of ingredients for a special touch. Some Favourites are; White or milk Chocolate, Mini Marshmallows, Toasted Coconut, Pecans, Hazelnuts or Almonds.


  • Heat the oven to 180C/fan 160C/gas.

  • Line a 22cm square brownie tin with baking parchment. Melt the butter and chocolate together in a microwave or in a bowl set over a pan of simmering water. Cool to room temperature.

  • Whisk the eggs and sugar together until the mixture is light and fluffy.

  • Fold the chocolate mixture into the egg mixture and sift on the flour, baking powder and cocoa.

  • Fold in Flour, Baking Powder & Cocoa to give a fudgy batter.

  • Add your optional 100g of extra ingredients

  • Bake for 25-30 minutes or until the top is cracked but the middle just set. Cool completely, then lift out of the tin and cut.
