We’ve all been there, it's dinner time, you're hungry, and suddenly the question hits: What on earth am I going to cook tonight?
Or maybe you’re looking to freshen up your lunch game with something that's delicious, hearty, and easy to pack.

Let us introduce you to our version of Butter Chicken—a simple, crowd-pleasing dish that’s rich, creamy, and full of flavour.
Originally inspired by a recipe from taste.com, we’ve added our own little tweaks to make it just right.

Grab some fluffy steamed basmati rice, warm pappadums, or soft naan bread and you’ve got yourself a restaurant-worthy meal right from your kitchen. 🍽️

What You’ll Need:

  • ½ cup Greek-style yoghurt

  • 2 garlic cloves, crushed

  • 3cm piece fresh ginger, peeled & finely grated

  • 2 tsp ground cumin

  • 2 tsp ground coriander

  • 1 tsp garam masala

  • ¼ tsp chilli powder (optional, if you like a little heat!)

  • 600g chicken thigh, cut into bite-sized pieces

  • 1 tbsp vegetable oil

  • 20g butter

  • 1 brown onion, halved & thickly sliced

  • 410g can tomato puree

  • ½ cup chicken stock

  • ½ cup thickened cream

  • Steamed basmati rice, to serve

  • Fresh coriander leaves, to serve

  • Naan bread or pappadums, for the perfect side

Let’s Get Cooking:

Step 1: Marinate the Chicken

In a large dish, combine yoghurt, garlic, ginger, cumin, coriander, garam masala, and chilli powder.
Add the chicken pieces and stir until everything is well coated.
Cover and refrigerate for at least 2 hours to let those gorgeous flavours soak in. (You can even prep this part the night before!)

Step 2: Sizzle and Simmer

Heat oil and butter in a large saucepan over medium-high heat.
Add the onion and cook, stirring occasionally, for about 3-4 minutes until softened and lightly golden.
Add the marinated chicken and cook, stirring, for about 5 minutes until the chicken just starts to colour.

Pour in the tomato puree and chicken stock, give it a good stir, and cover.
Bring to the boil, then reduce the heat to low and let it simmer for 10 minutes until the chicken is tender and the sauce thickens slightly.

Step 3: Creamy Goodness

Stir in the thickened cream and let it simmer for another 5 minutes until the sauce is beautifully silky and heated through.

Time to Plate Up

Serve your butter chicken with fluffy steamed basmati rice, sprinkle with fresh coriander leaves, and don’t forget the naan bread or crispy pappadums to scoop up all that delicious sauce.

It’s perfect for family dinners, meal prepping for the week, or even impressing your mates at your next get-together.

Want to make it vegetarian? Swap the chicken for roasted cauliflower or chickpeas—it’s just as tasty!
